Things I’m Loving – July 2012

If you read a few blogs you may have seen a trend for “things I love” lists.

Usually it’s a round-up of things, clothing, make-up, snacks and such, that the writer is enjoying and wants to share. It’s stuff you can buy and the author usually links to websites to buy said things.

I like the idea behind the list but I’ve decided to only share things that can’t be purchased. So this is things I’m loving that you don’t have to break out a credit card for.

Slow Cooked Scrambled Eggs

The only downside to making these eggs is that they take some time. And my almost three year old loves them and now won’t eat a hard scrambled egg so I’ve created more work for myself.

If you’re not an egg fan move on. If you are an egg fan give these a try.

This is my method and recipe but I am sure you could get away with adding or subtracting what you like. If you don’t eat dairy a bit of coconut butter makes a delicious substitution. I bet fresh dill would be a nice addition or if you want some kick a pinch of crushed chilis. If you want to add a bit of cheese do it right at the end so it lightly melts into the eggs.

  • whisk four eggs in a small sauce pan
  • add in a half tablespoon of butter and salt and pepper to taste
  • over the lowest heat possible, stir constantly
  • watch for the eggs thinning out and looking watery. This is a good sign.
  • after the watery stage the eggs will slow thicken
  • when they hit the consistency of a thick yogurt they are done
  • if you prefer a harder scramble keep stirring until the eggs clump up

The beauty of these eggs is that they have a very creamy texture and an intense flavour. Cooking for a long time over a low heat reduces the eggs and allows them to cook into a thick custard like consistency. They are delicious on toast or with a side of sauteed kale. And bacon. Always good with bacon.

Sleep in + Book = The Best Gift

One of my favourite lazy things to do in my pre-child days was to sleep in a bit on the weekend (for me that means 8am instead of 7am) and stay in bed for another hour reading.

My husband has made that happen for me a few times recently. It feels really decadent and I love slowly greeting the day snuggled into a warm bed with a good book.

Our Laughable Summer Weather

There really hasn’t been a summer to speak of for us so far. Rain, rain and more rain. Dark skies. A chill in the air that has me thinking about my down jacket that I put away in May. It’s not just here in the Isle of Man either. The UK is having very wet summer in general. Right, Jo?

What do I love about this terrible summer? It’s forced me to take myself and Henry out to play in the rain and get our fresh air despite it. Or maybe just to spite it?

Whatever the reason I’m loving that our dark summer has pushed me to ignore it. To put the rain cover on the stroller, to let my son get soaked in puddles and covered in wet sand and to make a go of our usual fair weather activities. We had a windy picnic in Port St. Mary the other week and I’ve been caught in rain showers wearing my light, not water proof, jacket numerous times.

Wet and wind be damned, we’re having a great summer.

  • Great tips on the scrambled eggs! Properly done eggs are definitely in the “LOVE” category for me as well.

  • Afternoon naps, cuddles from a cat, a book given not bought, sitting on the back step watching the sun go down, talking to my mum and dad, 3 hours on the phone talking to my sister, luch with a friend and they pay.

  • Sleep-in with book? Total awesomeness! I remember those days…
    If it’s any consolation, the New Zealand summer just gone was wet, wet and some more wet, but I figure if there’s nothing you can do to change it, you may as well have some fun! And we have been rewarded with the most amazing Autumn and even our winter is pretty sunny so far!
    Things I’m loving at the moment? The most amazing gluten-free date and walnut loaf that I tried making yesterday. Yum!, going to the museum and gardens in beautiful sunshine (sorry…), my kids having friends over to play and my house being filled with laughter.

  • This is my favorite way to make eggs! I do it slightly differently: I use medium heat, but I take the eggs off the heat frequently to stir, then back on the heat to cook a bit more. Also, when they are cooked I add a touch of sour cream or creme fraiche and stir. Yum!

  • I need to get me some of that sleep stuff- waking up feeling refreshed is the best!

    I’m loving food growing in the garden- doing well because of all of that rain…

  • Thank you so much for the eggs recipe. CatMan (my better half) always complains that the eggs are “wearing moccansins” as he puts it, but I’ve never figured out how to make them soft like that. I’ll give it a try.

    In terms of what I’m loving right now… well..

    1) Exercise! I blew out my knee 4 years ago (torn meniscus we think, although the doctor didn’t want to do an MRI since I was against having surgery if it was at all avoidable.) Anyhow, I’m finally getting back into the swing of things and am able to bike & work out daily again without pain for the first time in years. It’s SOOOOOO wonderful.

    2) Rain. Finally, rain. We’re having extreme drought here in Colorado, but finally we got a taste of our upcoming monsoon season with three beautifully cool rainy days. It’s been wonderful to wash all of the smoke out of the air from the recent fires, and it’s been so nice and cool – I can actually walk outside without feeling like I’m in a blast furnace! Can’t Mother Nature find a way to spread it around a bit?

    3) Sleep. I made a commitment to go to bed earlier a few weeks back, and I can’t even describe how amazing I feel. OK… I’ve sorta been cheating and using melatonin, because otherwise I can never fall asleep before 5am. It’s just so wonderful to go to bed and actually sleep uninterrupted for 8 hours.

    The best things in life really aren’t things!

  • Well we’ve had lots of forest fires so too bad we can’t have a week of that rain. But I love the feel of hot sun on your skin, the smell of chlorine and sunblock, the sound of kids laughing and splashing, little hands sticky from melting popsicles, and heat welling up from the pavement. I could probably try cooking those eggs on it, which sound great by the way!

  • things I’m loving right now, the short walk that my son (3.5 y/o) and I have every day when I pick him up from preschool. it’s about a half mile from school to the bus stop (or playground, depending on where daddy’s picking us up). Yesterday was beautiful in Boston, warm but low humidity and we held hands and chatted the whole walk. It was a perfect moment, that I was able to appreciate at the time. That’s just priceless.

  • I would take dark weather over the 105+ temps we’ve been getting. And we’re in drought, too. Going outside for more than a few minutes is dangerous here, and there have been deaths from the heat.

    I’ve been really into soft scrambled eggs, too! I read something about them in the NYTimes recently and now can’t get enough of them. They’re almost like dessert.

    • See, another reason for me to be thankful for our weather. And, I am saving a bit of $ on sunblock.
      I could eat those eggs every morning. I’ve had to force myself to mix things up because I don’t ever want to burn out on them.

  • Weather really bad here, near Gatwick Airport in the South of England. Worst summer weather I’ve ever known! Have decided that we’ll go out in wellies in the summer holidays and try to enjoy the rain, and if the kids get muddy then so be it! Looking forward to our holiday in France for some sun!

  • We visited the UK twice and we were always astonished about so many people having picnics when the weather was really bad.
    The weather here in Luxembourg is the same, so much rain.

    • No point letting winter weather get in the way of the summer! It’s summer, so shorts and picnics, even if it’s raining hard. (Can you tell that I spent my childhood holidays camping in the rain?!)

  • That really made me laugh! Was looking at my stats and could see some referals from this post that I hadn’t yet read! Oh Boy I’m gonna get a reputation. Every blog I comment on seems to end up being a weather moan. I’m definitely an authentic Brit! The book and bed sounds great – I’m back into my books at the mo… And as for the eggs – right up my street! Will have to give it a go.
    p.s it’s relentless today – the rain… I reckon Ark building may be a great thing to get into… there’s definitely a gap in the market!
    p.p.s non-things I love…got to be watching a Disney DVD with the Kids on a wet Sunday afternoon, with blankies!

    • Talking about my reputation… just headed back on over to mine and within the stats it shows that someone found my blog today by searching on the term ‘bunny boiler’ – really laughing now!

      • p.p.p.s – another non-thing I love – finding out what a friend is reading, reading it at the same time comparing notes! Opens the book up to a whole new perspective usually! I leave you in peace now – time for the eyebrows to meet their fate.

        • Love this too. My sister and I read the same book at the same time recently and kept checking in on each other, what part are you at? What do you think of ____? Fun.
